Try this delicious salad make the Beyond Organic Growers farm fresh arugula and romaine. The crunch of the almond, sweetness of the pear, creaminess of the goat cheese and the distinct peppery flavor from the arugula make this a salad perfect for any occasion.


1 – Romaine on the root
1 – Arugula on the root
1/3 Cup – Crumbled Goat Cheese
1/3 Cup – Chopped Almonds
1 – Diced Bosc Pear

For the dressing:

1/4 Cup – Extra Virgin Olive Oil
1 Tbsp – Dijon Mustard
2 Tsp – Maple Syrup
Juice of Half a Lemon
2 Tbsp Chopped Parsley
1 Clove Chopped Garlic
Salt and Pepper to Taste


For the dressing, chop the garlic and parsley and add all ingredients to a medium sized mason jar. Shake vigorously and set aside in the refrigerator.

In a large bowl chop the arugula and romaine lettuce until the pieces are smaller. On a cutting board, chop the almonds until pea sized and add to the salad bowl. Dice the bosc pear into 1/2″ squares and add to the bowl. Crumble the goat cheese and add that as well. Add 2 Tbsp of your homemade dressing (shake again before hand) and chop until all ingredients are mixed. Serve and enjoy.
